Hasty Chocolate Pudding

Hasty Chocolate Pudding Recipe
  •  I found this yummy home made chocolate pudding recipe on allrecipes.com. This is just as easy and quick to make as boxed pudding but tastes sooo much better! You can even fold in whipped topping to make it taste more like a mousse.

  • 1/2 cup white sugar
  • 1/3 cup unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • 2 cups milk
  • 2 teaspoons vanilla extract

Directions

  1. In a microwave-safe bowl, whisk together the sugar, cocoa and cornstarch. Whisk in milk a little at a time so the mixture does not have any dry lumps.
  2. Place in the microwave, and cook for 3 minutes on high. Stir, then cook at 1 minute intervals, stirring between cooking times for 2 to 4 minutes, or until shiny and thick. Stir in vanilla.
  3. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming, and chill in the refrigerator. Serve cold.

Favorite Chocolate Chip Cookie Recipe from Midwest Living

Marjorie's Chocolate Chip Cookies

Marjorie's Chocolate Chip Cookies

I came upon this recipe while browsing for a chocolate chip cookie recipe online. I LOVE this recipe! It is now my "go to" recipe for chocolate chip cookies, reminding me of the cookies our neighbor made for my sister and me when we were kids. Enjoy!

Ingredients

  • 2-1/2  cups  all-purpose flour
  • 1  tsp.  salt
  • 1  tsp.  baking soda
  • 1  cup  butter, softened
  • 1  cup  granulated sugar
  • 1/2  cup  packed brown sugar
  • 2    eggs
  • 1  tsp.  vanilla
  • 1  12-oz. pkg. (2 cups)  semisweet chocolate pieces
  • 1  cup  chopped walnuts

Directions

1. In a medium bowl, combine flour, salt and baking soda. Set aside.
2. In a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar and brown sugar. Beat on medium speed until mixture is light and fluffy, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour mixture as you can with the mixer. Stir in any remaining flour mixture with a wooden spoon until combined. Stir in chocolate pieces and walnuts.
3. Drop dough by rounded teaspoons or by using a small ice cream scoop 2 inches apart onto ungreased cookie sheet. (Or, cover and store dough in the refrigerator until chilled. Shape dough into 1-inch balls and arrange cookie sheets.)
4. Bake in a 375 degree F oven for 9 to 11 minutes or until edges are light brown. Cool on cookie sheets for 1 minute. Transfer to wire racks and let cool. Makes about 60 cookies.
